I really like the couscous salad at Whole Foods. So much so that I decided I could make it myself with whatever ingredients were inside my refrigerator. I prepped this mega easy salad last night for lunch today, and I couldn’t have been prouder of the results. Use whatever seasonal ingredients you like, really, and you can make one too.
- 1 or 2 bell peppers (red, yellow, orange)
- 1 broccoli stalk
- 2 cups of spinach
- 2 cups of cooked couscous (follow instructions on box)
- 1/2 lemon, juiced
- 1 tbsp olive oil
- 1/4c feta
- 8 sliced kalamata olives
- 1/2 tsp salt, 1/2 tsp pepper (to taste)
Refrigerate couscous once it is prepared according to box directions. Rinse and chop up broccoli, spinach, and bell peppers. Stir ingredients together and stir in lemon, olive oil, salt and pepper. Refrigerate until ready to eat.
